Almost every day I make myself two, over-easy eggs. That is a lot of practice in the art of making eggs! You would think that I would have the process down to a science, wouldn't you? I should be able to make the PERFECT egg by now!
But in actuality, my egg-making prowess varies from day to day. Some days I am impatient and I crack the eggs into the pan before the pan is hot enough - this invariably leads to a BIG MESS. Some days I cover the pan, do too many other things and overcook my eggs. Sadly, they can no longer be called "over-easy".
Today, I turned the pan on and started putting clean dishes away and picking up the kitchen. A few minutes later Mike let me know the pan was starting to smoke. Oops. I forgot that I was making myself breakfast! But the pan was the just the right temperature and my eggs... perfect.
I will let you mull over what this all means to you. For me, it was a pretty accurate analogy to my life and imperfections even after almost 42 years of non-stop practice.
